Spicy Tomato Masala Mutton Curry Recipe

Who wouldn't love to taste a dish with a twisted combo of tomato puree, spices and minced mutton? I love eating mutton from my childhood a lot. I started developing my love on cooking at a very young age. Egg is the first non-veg recipe (Or veg huh?) that I began to cook, then chicken and finally now, I am getting a little expert in cooking mutton recipes as well. The main reason my mom didn't allow me to cook mutton at my younger age is that, I might cook it in some improper way (She used to say 'Acho! mutton usually takes more time to get cooked well and you will totally mess it up. Uff) Okay fine, at last what I am saying is, I love cooking MUTTON more than I cook other non-veg items. Today, I have come here up with a special tomato masala mutton curry recipe for you all to enjoy your weekend.
     I tried cooking mutton curry with different spices and this combo just worked perfect and YES, this is my very own mutton recipe. I am very sure that you will love this recipe a lot if you're a mutton + tomato lover. I am neither a sour taste lover nor fond of tomatoes but I just can't stop wondering how these juicy red tomatoes give this kinda delicious aroma and flavor to my mutton curry! Spicy Tomato Masala Mutton Curry Recipe





Things you will need:
  • 1/4 kg mutton, cubed or minced
  • 3 big onions
  • 1 teaspoon of chilly powder
  • A pinch of garam masala (Optional)
  • Required Oil
  • Required Salt 
  • Required Water
  • Coriander leaves to garnish

For Masala:
  • 2 ripen tomatoes
  • A green chilly
  • A small dried red chilly
  • 5-6 garlic pods
  • A small bit of ginger
  • Black pepper, 5-10 nos

Preparation:

Step 1:

In the first step, we are going to prepare the tomato masala. This is the important part of this recipe and you need to be very cautious while gathering the ingredients for this. The entire taste of your mutton curry recipe depends on the freshness of the tomatoes you choose. Choose juicy, ripen and RED tomatoes. Clean them, chop them and grind them to smooth puree in a mixer, of course without water. Once the tomatoes get pureed, add the other masala ingredients to the tomato puree. If you wish, you can spare half of the garlic pods and ginger for sauteing (This will given some extra flavour to the recipe).
    Now grind all the spices and tomato puree together until the masala turns smooth and reddish brown in colour. Your senses would be awaken with a very aromatic, tomato masala flavour while grinding these, as just like what happened to me.
      So listen, we are adding both the dried chilly and green chilly for that masala effect and flavour however you can go for only one depending on your wish. Do not skip the pepper because it not only gives a peppery fresh aroma, but also kills the bacteria in meat, if any. Now, your smoothly pasted tomato masala is all ready! Cooking this with the mutton is dead easy so don't feel lazy to read the other steps :P





Step 2:
Peel and chop the onions finely; keep aside. Mince the spared ginger garlic and coriander leaves. Rinse and drain the chopped/minced mutton. I added a pinch of turmeric powder to the mutton while cleaning it as my mom said turmeric will kill any germs present in meat. You can either choose chopped or minced mutton for this curry recipe. Chopped would be fine if you're pairing it up with plain rice or other rice recipes and minced would go well with naan, chappatis and such.





Step 3:
Now comes the fun :D The ingredient preparation process is over and we can enjoy cooking the recipe now. Firstly, pour required oil in a pressure pan. Once it is heated, add the spared and minced ginger and garlic. Saute in low flame.



Step 4:
Add the finely chopped onions after sauteing the ginger & garlic well.



Step 5:
Saute the onion in low flame until it turns golden brown in colour. Not that brown, but a slight brown; Please do refer the picture below once.



Step 6:
Now we are going to put in the tomato masala. Tadaa..



Step 7:
Saute everything together well in low flame until the raw smell disappears. (I madly love sauteing masalas.. Yuuummmmy.. their aroma!)



Step 8:
Time to put in the mutton now! Add the mutton to your tomato masala and saute well again.



Step 9:
Now add, a teaspoon of chilly powder, required salt and a pinch of garam masala (Optional) to the mutton masala. We are skipping turmeric powder here as we cleaned mutton with that. Saute mutton well together with all the spices and masala in low flame.



Step 10:
Add 1/2 a cup of hot water to the mutton and allow it to come to a boil. Now the oil would be separating at the top; Right?. In this stage, close the pan with the top lid. Let us give some time for the mutton to get cooked and let it absorb the yummy tomato masala flavour. Allow the mutton to cook for about 15 minutes in low flame. Throughout the making of this recipe, you should be doing everything in low flame only.




Step 11:
Open the pressure pan after 15 minutes. Your yummiest and delicious spicy tomato masala mutton curry is all ready to eat now! Garnish and serve hot.
