Egg and Cashew Chicken Dry Curry

Chicken curry is one of the most delicious South Asian dish, prepared in different styles around the world. It goes very well with naan, roti and biryani! Today we are going to check a dry chicken curry recipe in combination with eggs and cashew nuts! Try this recipe and I am sure you will get addicted to it.

Ingredients:

  • Cooking oil, required
  • Ghee, 2 teaspoons
  • Salt, required
  • Water, required
  • Chicken, 1/4 kg
  • Eggs, 2-3 nos beaten
  • Ginger garlic paste, 2 teaspoons
  • Tomatoes, 2 nos. chopped
  • Cashew nuts, 50g. powdered
  • Chilly powder, 2 teaspoons or as required
  • Garam Masala, 1/4 teaspoon
  • Coriander leaves for garnishing

     

    Method:

    • In a non stick pan, pour 4 teaspoons of cooking oil and allow it to heat. Once it is heated, put in the cleaned chicken pieces and fry them in medium flame for 2 minutes. Later, simmer the stove and close the pan. If needed, sprinkle some water to the chicken. Allow the chicken to get cooked in low flame for 10 more minutes. After 10 minutes, open the pan and add a teaspoon of red chilli powder and required salt to the cooked chicken and saute well for 2-3 minutes until the chicken pieces get fried well. Collect the fried chicken in a separate bowl.

    • In the same pan, add some cooking oil again and scramble the beaten eggs. Fry them in medium flame for 2-3 minutes and add required (1 teaspoon for 3 eggs) chilli powder and salt as the same way we fried the chicken. Now put in this fried eggs to the bowl of fried chicken and keep aside.


      • We have the fried chicken and eggs ready and now we need to prepare the cashew masala. Heat a non stick pan and drizzle 2 teaspoons of ghee to it. Sauteing masala in the ghee gives a rich flavor and aroma to the recipe. Add ginger garlic paste to the pan and saute it in low flame. Quickly put in the finely chopped tomatoes and saute the mixture well until the raw smell disappears. Now add the cashew powder and pour some water (Hmm.. Say 1/4 cup) to the masala. After including the cashew powder, add a pinch of salt, 1/4 teaspoon garam masala and 1/2 teaspoon chilli powder and saute everything together well. Here we made the rich and creamy cashew masala for our dry chicken curry!

      • Simmer the stove and see whether the oil separates on the top of the masala. Now this is the right time to put in the fried chicken and eggs. Add them to the masala and saute well in low flame for 2 minutes in order allow the chicken to absorb the masala flavors. 

      • Your delicious Egg and Cashew Chicken Dry Curry is all ready to eat now! Garnish with fresh coriander leaves on the top and serve hot.
